Quinoa Macaroni Salad~Superfood Style

Quinoa MAcaroni SaladThis is the best macaroni salad I have ever had! Love the new quinoa pasta! Macaroni salad super-food style. The coconut oil gives it a delicious flavor!!!

 

 

 

 

I box or 8 oz quinoa macaroni
1 cup organic mayonnaise
1 cup virgin coconut oil (from glass jar)
2 roasted peppers chopped
I head of steamed broccoli
1/2 red onion chopped
Apple Cider Vinegar
Himalaya sea salt
Organic pepper to taste

Hand-full of hopped Cilantro or parsley

This makes about half gallon!!!

Mix it up and put it in a bowl. Add more mayo, coconut oil and vinegar as needed!
This makes a lot of macaroni salad and is the best I have ever had.

I originally made this salad looking for ways to add broccoli to my diet.
