While I am glad I read the book, I was disappointed in the surprise ending of “Wheat Belly”.
I read all about how giving up wheat healed people of heart and immune system conditions , diabetes etc and how they dropped lots of weight fast. But then the ending is a diet is a low carb, low glycmic index diet (very little fruits, carbs, honey, beans, grains etc) . Giving up wheat and limiting other carbs and natural sugars.
I think it is true, that if you have any chronic ailment,allergies, asthma, digestive discomfort, MCS/EI you should get the gluten allergy test and/or just stop eating wheat and gluten for a month or more and then eat a piece of bread and see how you feel. I am not MCS/EI anymore, but am somewhat chemically sensitive. Being so sick for those 2 years was a traumatic experience. I am the person who eats healthy and never had anything less than 100% physicals. I had some fatigue and some mood swings, but that was it. I have been on a quest to detox and ferret out what weakness in me allowed me to get so sick. I think the wheat could be a piece to the puzzle.
Also, motivational is that I gained 8 pounds over a year and the ‘dropping weight’ promise was sweet! That, and the fact that bread is not tasting right to me. I have been suspicious about it for some time. I remember baguettes melting on my mouth in France and other delicious breads which I just cant find anymore. Any food that is not flavorful and mowatered ruling, is lacking nutrition. It’s the tale tale sign of pesticides, GMO’s and so many things that go wrong with modern food.
All large scale bakery bread comes from frozen dough, that’s Whole Foods bakery and all of the store bakeries. I have been searching delicious bread for some time. Having had to go organic, high quality and free roaming, grass fed, fresh, has seriously refined my palate and turned me into a foodie! The taste buds have a purpose, not to be confused with a plummeting blood sugar ‘craving’ sugar.
Recently, bread has just tasted like cardboard. Even though I was buying the best local organic sourdoughs. I was going to start making my own sourdough, when I stumbled across the best seller “Wheat Belly”. It confirmed what I suspected; that modern wheat is a messed up hybrid. This made sense. I am thinking I can learn how to make almond flour and almond flour bread or just buy gluten free.
After reading 150 pages and getting psyched to be totally healthy and thin. The author presents the “Wheat Belly” diet which is a low carb diet, probably like a South Beach Diet. Every fiber of my being is ‘anti-diet’. They ask you to limit things like raw honey, quinoa, beans and watermelon which are super-foods.
I decided not to do the ‘diet’ but I did give up Gluten to see what that’s like. I feel its doable for now. The gluten I am giving up because that part of this book seemed right. I am interested to see if I feel better. I don’t think I will lose weight. Most people would lose weight giving up wheat, because its in almost all processed foods and will be presented at parties and events and just giving it up (and beer-made from wheat) means lots less food for most people. I drink very little beer and eat at home, so I wont be giving up that donuts at the office, or those yucky wraps at conferences! I do love the occasional Trader Joes “3 cheese Organic Pizza”* or the occasional burger, but its a negligible calorie intake for me. I eat about two pieces of bread (or the equivalent of related carbs/grains)per day.
It was a good read. I like to know all about food so learning more about gluten and glycemic index etc was worth it, but I did feel hood-winked into that”giving up wheat” would heal everything and then was presented with what I saw as a strict diet.
Lots of people like the diet.
UPDATE: After 4 or weeks of no wheat, I lost weight!!I do feel better! I have not been bloated once, I have lost my muffin top that I have not been able to lose all year! (I also have been doing yoga everyday, but my body transformation has been dramatic and fast) and feel more energetic. It hasn’t been difficult for me. I just eat Rudi’s bread, quinoa pasta, and gluten free crackers when the mood strikes. I wasn’t a huge carb eater before. I think I will be sticking with it. Eventually, I will find some old world flour that is more healthy and make some sourdough bread. I don’t think I will go back to traditional bread.
